Ingredients
  

  • Boneless, skinless chicken thighs (or breasts)
  • Long-grain white rice
  • Honey BBQ sauce (choose your favorite brand or flavor)
  • Chicken broth (for cooking the rice and adding flavor)
  • Frozen mixed vegetables (like peas, carrots, and corn)

Instructions
 

  • Cut the chicken into bite-sized pieces and season lightly with salt and pepper.
  • Sear the chicken in a skillet over medium heat until browned and cooked through. Remove and set aside.
  • Add rice and chicken broth to the same skillet; bring to a simmer, scraping up any browned bits for flavor.
  • Stir in the honey BBQ sauce and frozen mixed vegetables. Return the chicken to the skillet, nestling it into the rice mixture.
  • Cover and cook on low heat for about 15 minutes, until the rice is tender and the flavors have melded. Let rest a few minutes before serving.
