Ingredients
- 1 lb flank or skirt steak, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 1/4 cup olive oil & 2 tbsp lime juice
- Seasonings: 2 tsp chili powder, 1 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, salt and pepper.
- 8 flour or corn tortillas
Instructions
- Marinate: Whisk olive oil, lime juice, and all spices in a bowl. Add steak and refrigerate for 30 minutes to 4 hours.
- Sear Steak: Heat a skillet over medium-high heat. Cook marinated steak for 4–5 minutes per side until seared. Remove and let rest.
- Sauté Veggies: In the same skillet, sauté sliced peppers and onions for 5–7 minutes until tender and charred.
- Combine: Slice rested steak against the grain, add back to the skillet with veggies, and toss for 1 minute.
- Serve: Warm tortillas and serve the steak-veggie mixture immediately with your favorite toppings.
