Ingredients
1 lb ground beef
1 packet taco seasoning mix
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 can (10 oz) diced tomatoes with green chilies (drained)
1 can (15 oz) corn (drained)
2 cups shredded cheddar cheese, divided
1 bag tortilla chips, coarsely crushed
Optional: Sour cream and fresh cilantro for garnish
Instructions
Preheat: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Cook Beef: Brown ground beef in a skillet until fully cooked. Drain excess grease, stir in taco seasoning, and simmer with a splash of water as directed on the packet.
Mix Sauce: In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, drained tomatoes, and drained corn.
Layer: Spread half of the crushed tortilla chips in the baking dish. Top with half the beef, half the sauce mixture, and half the cheese. Repeat the layers one more time.
Bake: Bake for 25–30 minutes until the cheese is melted, golden, and bubbly.
