Ingredients
1 lb kielbasa, sliced into rounds
4 medium potatoes, peeled and diced
1 onion, chopped
2 carrots, sliced
2 celery stalks, diced
3 cloves garlic, minced
6 cups chicken or vegetable broth
1 cup heavy cream or half-and-half
2 tbsp olive oil
1 tsp dried thyme & 1 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish
Instructions
- Brown: Heat oil in a large pot over medium heat. Add kielbasa and brown until crispy. Remove and set aside.
- Sauté: In the same pot, sauté onion, carrots, and celery until softened. Add garlic, thyme, and paprika; cook for 1 minute.
- Simmer: Add diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Finish: Stir in the browned kielbasa and heavy cream. Simmer for another 5 minutes to heat through.
- Serve: Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh parsley.
