One-Pan Creamy Tuscan Garlic Chicken


Description

Ingredients

  • 2 large boneless, skinless chicken breasts (sliced in half horizontally to make 4 cutlets)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp Italian seasoning
  • Salt and freshly cracked black pepper, to taste
  • 4 cloves garlic, finely minced
  • 1/2 cup sun-dried tomatoes (drained of oil and chopped)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach

Instructions

  • Season both sides of the chicken cutlets evenly with salt, pepper, and Italian seasoning.
  • In a large skillet over medium-high heat, melt the butter and olive oil. Add the chicken breasts and sear until golden brown and cooked through (about 4-5 minutes per side). Transfer the chicken to a plate.
  • Reduce the heat to medium. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1 minute until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and let it melt completely into the sauce.
  • Add the baby spinach to the skillet and let it simmer for 1-2 minutes until completely wilted.
  • Return the chicken breasts to the skillet, spooning the creamy sauce over them. Let everything simmer together for 1 minute. Serve immediately and enjoy!
